Fried chicken is a absolute favorite with so many people, including me! When I first got into rabbits I wasn’t sure what I to do with the meat I was getting. This was one of the first recipes I tried and I was blown away by how amazing it was and since then we have fried rabbit over and over.
INGREDIENTS:
- 1 rabbit fryer, cut up
- 1/2 cup all purpose flour
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
INSTRUCTIONS
- In a bag, mix flour, salt and pepper.
- Add the rabbit pieces, toss and coat well in the flour mixture.
- Heat the olive oil in a skillet.
- Place the rabbit pieces in the skillet over high heat, turning to brown evenly on all sides.
- Reduce heat to low, cover and cook slowly for 40-50 minutes or until tender.
- For a crisp crust, uncover for the last 10-15 minutes.
- Serve and enjoy!
