Rabbit Cacciatore Recipe

Since getting into rabbits, I love trying out new rabbit recipes so I was pleasantly surprised when I tried this one. I love recipes that are easy to make and this is definitely one of them. I hope you all enjoy this recipe, as much as my family and I do!

INGREDIENTS:

  • 1 rabbit fryer, cut up
  • 1 large onion, chopped
  • 1 can tomato paste
  • 1/2 tsp garlic salt
  • 1/2 tsp oregano
  • 2 bay leaves
  • 1/2 tsp sugar
  • Salt & pepper to taste
  • 8 – 9 ounces spaghetti

INSTRUCTIONS

  • Put rabbit in salted boiling water, cover and simmer until tender. Remove meat from broth and set broth aside.
  • Remove meat from bones, if desired.
  • Add the onion, tomato paste,garlic salt, oregano, bay leaves, sugar, salt and pepper to rabbit broth and simmer for 1 hour.
  • Cook spaghetti.
  • Return rabbit to reduced broth and serve on a bed of spaghetti.
  • Serve and enjoy!
