A little over a year ago, I bought a chevon shoulder chop with no idea what I was going to do with it but wanting to try it anyways. I found this recipe in one of my raising meat goat books and had to try it. It did not disappoint. I used a smaller chevon shoulder (about 1ish pounds), but I would recommend a larger cut around 2-4lbs.
INGREDIENTS:
- 1 shoulder or leg of chevon
- Salt
- Pepper
- 1 cup apple cider vinegar
- 1 whole garlic, finely chopped
- Water
INSTRUCTIONS
- Preheat oven to 350
- Mix apple cider vinegar with chopped garlic
- Rub the mixture onto the chevon and top with salt and pepper to taste
- Cover the bottom of the pan with the rest of the mixture
- Add meat to the pan and add water until 1/2 inch of pan is filled
- Bake for 2.5-3 hours and baste after each hour
- Let sit for 15 minutes, then serve and enjoy:)
