Honestly, I am not a huge fan of chipotle but this recipe sounded so good that I had to try it. It was amazing! It wasn’t too spicy which is what I was worried about as someone who doesn’t care for spicy foods. I hope you enjoy this recipe as much as my family and I do!
INGREDIENTS:
- 1 pork tenderloin, trimmed of silver skin
- 4 chipotle chiles in adobo sauce, finely minced
- 1/2 cup real maple syrup
- 1/4 cup freshly squeezed lime juice
- 1 tbsp finely grated lime zest
- 1 tsp garlic powder
- 1 1/2 tsp salt
- 1 1/2 tsp black pepper
- 2 tbsp honey
INSTRUCTIONS
- Combine lime, garlic, salt, pepper and honey in a gallon size bag.
- Add pork and refrigerate for 24 hours, then drain pork and set aside.
- Add pork to the hottest part of the grill and cook for 1.5 minutes.
- Turn 90 degrees and cook for 1.5 minutes. Repeat another 12 times, or until internal temperature reaches 140 degrees (for medium rare).
- While tenderloin cooks, mix maple syrup and chipotle and set aside.
- Make a foil pouch and place cooked pork inside. Pour maple mixture over and tightly seal.
- Let rest 15 minutes.
- Serve and enjoy!
